Sula Brut Champenois is a sparkling wine made using the traditional method, where the wine undergoes a second fermentation in the bottle. The grapes, primarily Chardonnay and Pinot Noir, are handpicked and fermented in stainless steel tanks. After the first fermentation, the wine is bottled with a small amount of sugar and yeast to initiate the second fermentation. The wine is aged on its lees for several months, developing complexity and fine bubbles. The bottles are then riddled and disgorged to remove the yeast sediment, and the wine is topped up with a dosage before being corked and labeled.
